Overview
For those of you attending the on-campus workshop, you will prepare a report on the simulated simulated inspection below. For those of you who are not attending, you will be required to carry out your own food business inspection under the supervision of a suitably qualified Environmental Health Officer and this will need to be approved by the Unit Coordinator. Whilst reviewing the simulated inspection details and photos, you will use the inspection template that you have chosen or developed to undertake a risk-based compliance inspection of a food business (i.e. the inspection findings are to be recorded on the inspection template you have selected/developed). You will assess compliance with the Food Act 2006 and associated subordinate legislation. You will review the simulated inspection details as if you are appointed as an Authorised Person under the Food Act.
After the inspection (review of the photos attached) you will evaluate your inspection template. Your evaluation of the inspection template, the findings of the inspection, an explanation of risk posed by non- compliances having regard to food safety principles and the causes of food-borne illness, recommendations to ensure the business achieves compliance with the relevant legislation and a draft notice/letter to the business will be submitted in a report.
The report should be in the form of a summary report that identifies:
the process undertaken before, during and after the inspection;
the process used to develop/select/select and amend an inspection template;
assessment of the inspection template following its use;
a completed copy of the inspection template/tool (attach as an appendix);
the inspection findings including an explanation of relevant science, risk assessment and legislative provisions. This should include at least 4 non-compliances with the FSSs;
Include in your assignment details of what information you do not have.
recommendations regarding further action (e.g. any enforcement action recommended to be taken, the timeframe for compliance, etc.) and justification for the proposed actions;
a draft letter/notice to the business advising them of the inspection findings (i.e. non- compliances with the Food Act and any other food safety concerns noted during the inspection).

You reviewed the previous inspections and found that there have been some minor non- compliances found during previous inspections, however no further action under the Food Act 2006 has been taken previously. More minor non compliances are being noted over time.
Type of food produced: Café style food with breakfasts, lunches, coffee and cake. Food business closes at 3pm daily.
Food handlers have done a basic on-line food hygiene course some time ago, and the food Safety Supervisor has attended the required training approximately 6 years ago.
The food business does not do any catering or transport any food. Nor does it manufacture or package any high-risk food, it is simply a café that does meals. It is considered a Category One business under Food Safety Standard 3.2.2A.
During your inspection you also sighted many staff members preparing, cutting and handling meat and then move to preparing ready-to-eat fruit salads and vegetable salads without any hand washing.
